Chicken Biryani

Biryani is loved by most of the Indians all around the world. Usually, Biryani takes a long time in preparation but this recipe here can be prepared in less than an hour and it will be tasty as well as healthy.



Ingredients:


Chicken pieces – 1kg
Basmati Rice – 500gm
Onions – 2 (medium sized)
Ginger Garlic Paste – 2tbsp
Biryani Masala – 1 Pkt.
Bay leaf – 2
Yoghurt (Dahi) – 2tbsp.
Fresh Green Chillies – 3 (medium sized)
Fresh mint leaves
Fresh coriander leaves
Oil
Salt to taste
Lemon Juice - 1
Saffron Color – ½ tsp.

Method:
For Chicken:
Step 1:
Wash the chicken pieces thoroughly and strain the water out through the help of sieve.
Step 2:
Now to marinate the chicken for the biryani, combine the oil, ginger garlic paste, biryani masala, yoghurt, green chillies and salt in a large bowl and stir together. Add the chicken pieces and toss together making sure the chicken is thoroughly coated in the marinade. Allow the chicken to marinate for 5 minutes with closed lid.
Step 3:
Now take a pot and add 3 tbsp of oil to it and then add the marinated chicken into it and cook it for about 5-7 minutes on high flame. Keep the prepared chicken aside for further use.
For Rice:
Step 1:
Soak the rice for half an hour before cooking.
Step 2:
Take a large vessel with add water (1.25 ltr) along with lemon juice, fresh mint leaves, bay leaves, salt and 2 tbsp of oil and let it the water to come at a boiling stage.
Step 3:
Now add rice into the boiling water and boil the rice until it’s cooked up to 90%.
Step 4:
Strain the water from the cooked rice and keep it aside for further use.
For Biryani:
Step 1:
Take a large pot and add some rice to the bottom.
Step 2:
Now add the prepared chicken into it along with fresh coriander leaves, fresh mint leaves and the caramelized onions.
Step 3:
Now add remaining rice at the top of the chicken along with saffron color and give rice a slight stir only from the top.
Step 4:
Close the lid and let the Biryani cook for about 10 minutes.
Step 5:
Serve the Biryani with Yogurt salad.
Note:
Yoghurt salad consists of a combination of cucumber, black pepper powder, salt, green chillies and yoghurt.

No Masala Dal Fry

Here is the recipe of one of those Dal which do not need any spices and is equally healthy and tasty.

Ingredients:
Urad Dal – 75gm
Ginger Garlic Paste – 1tbsp
Tomato (diced) – 1 medium
Onion (Sliced) – 1 medium
Green Chili (Chopped) – 1 medium
Curry Leaves – 6 to 7
Oil – 4tbsp
Salt to taste.

Method:
Step 1:
Boil Dal in a vessel with 1tbsp of Ginger Garlic Paste and salt for about 15-20 minutes or until it's cooked completely.
Step 2:
Take a fry pan and add oil 4tbsp; allow the oil to heat and then add medium sized onion (sliced). Allow the onions to fry until they become golden brown and then remove from the pan.
Step 3:
Add the remaining ingredients (tomato, curry leaves and green chili) in the frying pan with remaining oil and allow it to cook for about 5 minutes on a medium flame.
Step 4:
Add the fried onions and the other ingredients on top of the dal and give it a stir.
Your No Masala Dal Fry is ready to serve.

Halwa


Special occasions require sweets in order to enhance the bond and to make it memorable. Guests are going to arrive at your home and you have nothing special for them this Halwa recipe can be prepared quickly and easily which the guests will love to eat and will surely cherish too.



Ingredients:
Wheat flour – 180gm
Sugar – 180gm
Semolina (Soji) – 1tbsp
Ghee – 120ml
Salt to taste
Saffron (Zafran) – Pinch
Almonds and Pistachio (Sliced) – 50gm
Boiled water – 160ml


Method:
Step 1:
Take a deep vessel and pour ghee into it along with Wheat flour and roast it for about Five minutes on a medium heat.
Step 2:
Now add Sugar and Semolina (Soji) and then roast a little until the color becomes slight golden.
Step 3:
Finally add the remaining ingredients altogether with boiled water and cook the mixture until it becomes thick and smooth.
Step 4:
Garnish the Halwa with Dry fruits in a plate.

Cookies


Cookies are a major source of snack and easy preparing allows it to be the most favorite among many people. This kind of recipe is prepared in less than 30 minutes and is considered to be healthy and refreshing snack.


Ingredients:

Plain Flour – 500gm
Ghee/Butter (Melted) – 270ml
Baking Powder – 1 ½ tsp.
Milk Powder – 180gm
Sugar (powdered) – 180gm
Vanilla essence – ½ tsp
Salt to taste
Egg whites (whisked) – 1

Method:

Step 1:
Mix all the ingredients together and make a smooth dough except Egg Whites.

Step 2:
Now make round shape of cookies and arrange them on a tray.
*You can add almonds according to your preference.

Step 3:
Finally, brush the cookies with Egg Whites (whisked).

Step 4:
Preheat the oven to 160 degrees. Put the cookies tray into the oven for ten minutes.

Step 5:
Remove the tray from the oven and let it cool for around 10 minutes.
Cookies are now ready to serve.

Chocolate Protein Balls


This recipe is treated as one of the major substitute for protein bars and it is also relatively cheaper. It gives same benefits as protein bars with no side effects.  


Ingredients:

Dark Chocolate (Cooking) – 100gm
Oats – 75gm
Condensed Milk – 50ml
Pistachio (Chopped) – 9-10
Almonds (Chopped) – 9-10

Method:

Step 1:
Melt the dark chocolate (100gm) in a deep vessel.

Step 2:
Add Oats (75gm), Condensed milk (50ml) and Dry Fruits (Pistachio and Almonds) and mix it slowly until the mixture becomes thick.

Step 3:
Now prepare a sphere shape balls.

Step 4:
Store in a container and refrigerate in order to avoid the chocolate balls to expire.

Egg Patties

Presenting you the recipe of Egg Patties.


Ingredients:

Potatoes – 300gm
Eggs boiled and cut into 4 pieces - 3
Green chillies (Chopped) – 2
Turmeric Powder – ½ tsp.
Chili Powder – 1 tsp.
Garam masala powder – ½ tsp.
Lemon juice – 1 tsp. 
Bread crumbs – 100 gm
Fresh coriander leaves
Fresh mint leaves
Salt to taste
Oil 



Method:

Step 1:
Boil the Potatoes, then peel and grate them.

Step 2:
Take a deep bowl and add all the ingredients mentioned above except eggs and bread crumbs.

Step 3:
Divide the mixture into 12 equal portions and flatten each portion to a disc shape and add eggs into it and make it in a cylindrical shape.

Step 4:
Cover the prepared Egg Patties with bread crumbs.

Step 5:
Deep-fry the patties, till golden brown on both sides.

Step 6:
Serve the Egg Patties with ketchup or mayonnaise.

Potato Kebabs

This Potato Kebab Recipe is for those who love Spicy Indian Food. It is one of the easiest recipe one can ever make and it serves as a snack for most of the Indian families.



Ingredients:
Potatoes – 300gm
Green chillies (Chopped) – 2
Turmeric Powder – ½ tsp.
Chili Powder – 1 tsp.
Garam masala powder – ½ tsp.
Lemon juice – 1 tsp.
Eggs – 1
Bread crumbs – 100 gm
Fresh coriander leaves
Fresh mint leaves
Salt to taste
Oil 


Method:
Step 1: Boil the Potatoes, then peel and grate them.
Step 2: Add all the other ingredients and mix them together except egg and bread crumbs.
Step 3: Take a small amount of this mixture in the hand and flatten to a disc shape.
Step 4: Cover the prepared Kebabs with bread crumbs.
Step 5: Dip in beaten eggs and then fry (deep fry) in a pan on medium high heat till they turn golden brown.
Step 6: Serve the kebabs with ketchup or mayonnaise.

Ginger Honey Lemon Tea

Who does not wants to stay healthy?

Of course everyone of us wants to stay healthy and active throughout busy work day. One of the factors which can lead towards a healthy lifestyle would be consuming a glass of Ginger Honey Lemon Tea every morning before breakfast.
I have been consuming this drink for around 6 months and I have felt a lot of difference in me; one of the most important would be it keeps me active throughout whole day.
Make sure to read the benefits and notes as well.


Ingredients:

Ginger - 200gm
Lemon - 200gm
Honey

Method:

*Remove the skin of Ginger (200gm) and wash it thoroughly.
*Squeeze out the juice of lemon (200gm).
*Blend the Ginger and Lemon juice together into a fine paste (add water if needed).
*Store the paste in a glass container.

How to consume:

*Take a glass and add 1tbsp of Ginger-Lemon paste prepared earlier.
*Add 1 tbsp. of Honey with add hot/warm water (150ml) and mix it well.

3. Treats Nausea and Indigestion

Dal Tadka

Here is One of the healthiest Dal Tadka ever based on your votes on my Instagram. This is very simple Dal Tadka recipe which takes around 30-40 minutes of preparation time. There are various benefits of Chana Dal such as high in fiber content, helps to reduce cholesterol and have various source of Zinc, folate, Calcium and Protein.


Ingredients:


Chana Dal - 100gm
Ginger Garlic paste - 2 tbsp.
Tomato - 1 medium sized
Onion - 1 small
Oil
Cumin Seeds - 1 tsp
Mustard Seeds - 1 tsp
Chili Flakes - 1 tsp
Turmeric Powder - 1 tsp
Chili Powder - 1 tsp
Garam Masala Powder - 1/2 tsp
Red dried chili - 2 (cut into 2 piece vertically each)
Salt
Garlic - 4 cloves (crushed)

Method:

Place the Chana Dal in a pressure cooker along with Turmeric Powder (1/2 tsp), Ginger garlic paste (1 tbsp.), some salt to taste, roughly sliced tomato and water (about 2 cups) for about 10-15 minutes or till 2 whistle.
Now take a medium pot and add Oil (3 tbsp.).
Allow the oil to heat up a little then add garlic cloves crushed; fry them until they become slight golden brown in color then add Cumin seeds (1 tsp) and mustard seeds (1 tsp) and let it fry for a half minute.
Now add Red dried chili (2) and chili flakes (1 tsp); allow it to fry for a while and then add Ginger Garlic Paste (1 tbsp.) along with onion (1 small diced).
Now allow it to cook for about 5 minutes until the smell of Ginger garlic paste is gone then add turmeric powder (1/2 tsp), Chili powder (1 tsp), Garam Masala Powder (1/2 tsp) and some salt to taste; Cook for about 5 minutes .
Finally add the precooked dal into the pot and cook it for about 10 minutes with lid closed.

*Garnish the Dal tadka with chili flakes, fresh coriander leaves and small slices of ginger (optional).

Notes:

*Soak the Chana Dal for about half hour before preparation.

Tomato Fruit Juice

One of the best way to keep ourselves healthy is by consuming healthy fruit juices daily before having breakfast. Here I come with a very healthy Fruit Juice Recipe (Tomato Juice). Do not forget to read the Benefits and Notes.


Ingredients:

Tomatoes - 2 medium sized
Orange - 1
or
Lemon - 1

*These ingredients are only for 1 glass of Juice.


Method:

Boil Tomatoes till the skin can be removed easily.
Remove the skin of tomatoes and mix them in blender with 1 orange juice (Add water if needed).
Allow the mixture to cool before consuming.


Benefits of Tomato Juice:

Chicken Tandoori

Presenting you one of my best recipe based on my Instagram's votes which haven't let me down when I cook this for my Friends and relatives; Chicken Tandoori.





Ingredients:


Chicken   - 1 kg (Breast and leg pieces)
Oil
Salt
Lemon juice - 1tbsp
Yoghurt (Dahi) - 2tbsp
Vinegar - 1tbsp
Ginger Garlic Paste - 2tbsp
Chicken Tandoori Masala - 1Pkt
Coal -1pc

Method:
  1. For Marination:
Wash the Chicken pieces thoroughly and keep them aside in a sieve (Chalni) in order to drain the water out of the chicken. Take a container and Add Ginger Garlic paste (2tbsp), Oil (2tbsp), Lemon juice (1tbsp), Vinegar (1tbsp), Yoghurt (2tbsp), Chicken Tandoori Masala (1pkt) and salt according to your preference; mix them all together to make a fine paste. Now add chicken pieces into it and mix it well and make sure to apply on each piece of chicken thoroughly. 

Now heat the coal on stove for around 5-7 minutes on each side and place it on a aluminium foil in the middle of the container with chicken; now pour 1tsp of oil on coal and close the lid for around 10 minutes till the chicken absorbs the smoke.

      2. For Frying:   

Heat the pan (Grilled pan) and pour oil around 2-3 tbsp. let the oil heat up on high flame. Now add chicken pieces into it and let it cook on a medium flame for 10 minutes on each side. Do not turn the chicken until one side of the chicken is cooked. After the chicken is cooked repeat the process of coal;

Now heat the coal on stove for around 5-7 minutes on each side and place it on a aluminium foil in the middle of the container with chicken; now pour 1tsp of oil on coal and close the lid for around 10 minutes till the chicken absorbs the smoke.

Serve the cooked Chicken Tandoori with onions and lemon for a delightful presentation.

Note:

Chicken should have a slight burnt texture in order for it to look and taste like tandoori.

Use the same piece of coal for marination and after the chicken is cooked.
This recipe is only for 1 kg of Chicken and if you are using more than 1 kg then you have to increase the quantity of spices and other ingredients as well.
You can heat the coal before marinating the chicken as it will take almost 10 minutes to heat up and in that time you can marinate the chicken.

This recipe will not take more than 1 hr to prepare.

Special Ingredient - Ginger Garlic Paste

Ever wondered What is more important in any Indian food recipe? Of course! The base (foundation) is vital in order to make food look scrumptious and it should taste delicious to your taste buds. 


So, in order to make it look good and taste good today I will be sharing a very special and important recipe which is used in almost every kind of food items i.e., Ginger Garlic Paste which gives a base for every Indian Recipe. It is the base for any food recipe in order to make it taste delicious. I am already aware that most of you know how to prepare Ginger Garlic Paste, but in order to make food look fresh and healthy, I will be giving a recipe which is easy to prepare and convenient to all of us. This is the recipe I have been using since I have started cooking and it's one of the best foundation for having good and healthy food.



Ingredients:


Garlic         - 200gm
Ginger        - 200gm
Lemon        - 1/2
Green Chili - 1 medium sized
Water          - 1 Cup
Salt

Procedure:


1. Remove the skin of Ginger and peel off the skin of garlic.
2. Place the ginger and garlic in a mixer, add 1 Cup of water (use warm water) with 1 medium sized chili, half lemon juice and pinch of salt.
3. Blend the mixture until it becomes thick and creamy.
Note: Use more water for proper consistency if needed. You can keep this mixture in refrigerator for around 15-20 days. Lemon is used in this Paste in order to keep it fresh.
